My son can be pretty picky at times, and I have noticed that there are times when he is just not interested in eating meat.
I totally get it, sometimes I get that way too. I feel like my body needs a break from the meat and is craving lighter foods. So during these times I like to offer my two-and-a-half-year-old hummus and veggie straws for lunch or a snack. He loves hummus, and I was so happy to discover this because I was worrying about his protein intake at times.
Other options I offer are green smoothies with almond or peanut butter for the protein. He loves smoothies, and I also find this to be a win-win because I can sneak some greens in there too without him noticing.
For a non-meat dinner option I have made pan fried tofu bites with rice and veggies. He has liked this in the past, but being the picky guy he is, it's not always a winner with him, but I try. For the tofu recipe, I just cut the tofu into small bite size squares, heat up a little oil in a skillet, and fry them up until they are crispy. I make some rice on the side, and after the tofu bites are nice and crispy, you can set those aside and stir fry some veggies in the same pan.
