Did someone say Taco Tuesday?

The recipe that is important to my family’s history is “Taco Tuesday” because it allows us to spend some quality time and eat healthy together as a family.

When I prepare this meal I try to stick with healthy food options. When I go to the store I purchase:

  • ground turkey meat

  • taco shredded cheese

  • large flour taco shells (burrito-like)

  • taco seasoning packet of spices

  • lettuce

  • sour cream

  • and mild taco sauce.

  • Optional: I also add in Mexican rice and sweet corn to help fill us up.

I am someone who doesn’t like tomatoes; that’s why I would substitute it with some type of taco sauce. I even try to stay away from cheese because I am lactose intolerant, so I have to watch my dairy intake when I eat this meal.


When I prepare it, I wash our cooking ware then brown the ground turkey meat, and I would add my seasonings to my liking. Then I cook my rice and boil the corn. Lastly, I put a little butter on a small skillet to brown and cook the shells.

Once everything is cooked, I wash off the lettuce, and combine all ingredients on a shell. However, my son prefers eating his with the rice and corn on the side. So I leave it up to the individual on how they want to eat it.


I got this taco tradition from my aunt. We didn’t call it Taco Tuesday, but she did use some of the ingredients I just mentioned. I couldn’t wait to go over to her house just to have some of her infamous tacos.


Being a lover of Mexican food and applying it to my family meal weekly is so beneficial, because it is a quick meal that can stretch for about two days. I mean, who doesn’t like tacos? I recommend adding this meal to your weekly meal planning. It will be something you and your family enjoy!
