Black Bean & Corn Quesadillas




Every month when we get our WIC checks I always like to think of new recipes to utilize all the food items we receive. One of my family's favorite recipes is Black Bean & Corn Quesadillas.

When I first used WIC checks I thought they were just for the basics but your produce checks can be used for a lot of different items, including salsa and canned vegetables. Your whole grains can be tortillas and I always choose black beans or pinto beans for my dry bean option.


Recipe:

Ingredients


1 Can of Corn 2 Cups Black Beans ½ Cup Salsa Cheddar Cheese (shredded) Whole Wheat Tortillas


Directions


Combine salsa, corn and beans in a bowl. Heat skillet. Lay down one tortilla, I add a sprinkle of cheese and then place the corn/bean mixture on top and sprinkle with more cheese. Cheese on the bottom and top help it all stick together once heated all the way through. Of course top with another tortilla. Cut up and enjoy!


Helpful tip: We are a family of 3 and don’t eat all the beans in one sitting so I make the whole package and freeze what we don’t use. That way I have prepared beans ready whenever I need them!
