A Few Late Summer Favorites


The end of August is almost here. My family is beginning to think about the transition into the new school year routine. New sports practices are starting, and the general season of life feels like it is changing. In my state of Michigan, the weather is beautiful, and I don't want summer to end - because here - the winters are long and cold. But before I get ahead of myself, I wanted to share five of my favorite seasonal recipes. These are all from our Health eKitchen recipe collection.


This one is great for August because you can use fresh corn! Yum! Canned corn works too - but I am all about using what's in season. It's usually budget-friendly too!



I substitute a plant-based alternative for the meat (there are so many good ones out there these days!). This one has 9 WIC-approved ingredients! Woohoo!


My vegetable garden is producing more zucchini than I know what to do with! This is a great way to use it up. Invite your kids to help make them!


I have a sweet tooth. These are

a-w-e-s-o-m-e. They are great to pack in lunches or as an on-the-go snack. I love them.


This salad boasts so many fresh vegetables you might find at your local farmers market or in your own garden. Lots of flavor and nutrition!
